I slice the potatoes (1/3 inch is OK) and season them with Flavour Mate Salt Free Original, black pepper, paprika, Italian seasoning, garlic powder, and cook 'em in olive oil and butter. I do the same with the other veggies, and I forgot to put capers on the list, but they get cooked in with the veggies. I then consolidate, throw on enough Thai currie sauce to cover everything up pretty well, and reheat. I never measure anything. I just throw in what feels right. Yukon Gold potatoes are the absolute best. I didn't have any, but if I had; I would have used shallots instead of onions. Shallot onions are my favourite thing to cook with, but boy do they send you into orbit if you put 'em in a salad.

I never use salt proper. The jar of capers takes care of that in this case. I like Trader Joe's.
