Do you steam or boil the potatoes first? Interesting that you add Italian seasoning - I was thinking of adding some dried herbs of some kind to my curried omelette, but couldn't decide or bother to experiment. I try to grow my own coriander but there's not enough space here to grow it inside - it's rarely available locally, and its fancy packaging pumps the price way up. I agree with you about the Yukon Gold, and also the red depending on availability and quality. Sometimes I follow a recipe, but these days I'm generally simple and practical with my cooking.
